Single Serving Sweet Pork Smothered Enchilada

  • 1 Carb Balance Flour Tortilla (mission)
  • 110g Slow Cooker Sweet Pulled Pork
  • 15g light Mexican cheese blend (I love Trader joe’s)
  • 1/2 cup Green Enchilada sauce.


  1. Set oven to broil, low.
  2. Spray cooking pan, I use a pie pan for this single serving enchilada, feel free to use whatever works best for you.
  3. Fill tortilla with pulled pork, add 1/4th of the green enchilada sauce to the inside. roll and set on pan with the seem of the tortilla facing down.
  4. Top with cheese and the remainder of the green enchilada sauce.
  5. Broil for 2-5 minutes until cheese is melted.
  6. I love serving this with shredded lettuce, pico de gallo, and some avocado! It’s a macro friendly version of Costa Vida, for any of you who have that restaurant nearby.
