Southwest Ground Turkey & Rice Skillet

Ingredients

  • 1 Tablespoon Olive oil
  • ½ cup finely diced onion
  • 1 cup finely diced red or orange bell pepper
  • 2 cloves garlic, minced
  • 1 pound 99% fat free ground turkey
  • 1 Teaspoon  salt
  • ¼ teaspoon ground black pepper
  • 1 teaspoon chili powder
  • ½ teaspoon cumin
  • ¼ teaspoon Chipotle powder* optional
  • 1 teaspoon dried cilantro
  • 1 10 ounce can Rotel
  • 1 4 ounce can mild diced green chiles
  • 1 14 ounce can black beans, rinsed and drained
  • 1 cup corn
  • 2 cups cooked rice
  • 1 cups Lite shredded Mexican cheese blend, divided into halves. I like using trader joes lite shredded 3 cheese blend. it has great macros.

Optional Garnish (these are not included in the macros given for the recipe)

  • Chopped scallions
  • lime juice
  • Tortilla chips - I like to crumble some on top to give it a yummy crunch!
  • Plain greek yogurt
  • avocados

Directions

  1. In Large skillet heal oil over medium high heat.
  2. Saute onions and bell peppers in oil till softened. Add garlic and cook for another minute.
  3. Add in ground turkey, make sure you really break it up. Lean turkey has a little different texture. it needs to be broken down and worked well or it can just keep it’s stringy look. Also, it’s easy to overcook so you can turn down the heat to medium to brown it.
  4. Once turkey is browned add in chili powder, cumin, chipotle powder, salt, black pepper, and cilantro. Cook for another 2-3 minutes.
  5. Add in the Rotel, diced chiles, black beans, corn, and cooked rice with 1/2 cup of the Mexican blended cheese. Stir it all up and cook for a few more minutes until the cheese is melted and blended through.
  6. Top with the remainder of cheese, turn off the heat and put the cover on to melt the cheese on top. You could also broil it for a few minutes if desired.
  7. Top with desired garnish. I really like adding plain greek yogurt and crushing up tortilla chips and sprinkling it on top. it gives it a really yummy crunch! My kids all asked for seconds so this was kind of a big deal in my home 🙂
